My interest in the benefits of nature’s gifts, especially those that we eat, has recently been reinvigorated by a good friend of mine, sometimes known as the green fox.
I have been aware of all of the benefits of chia seeds for a while now, and happily add it to my porridge, smoothies and baking. i even add ground chia to mia’s yogurt for the omegas. but i had not yet explored the inherent jelly-like texture for its own sake. i was… dubious.
I need not have been, including coconut milk in these little indulgences makes it so creamy and seems to overcome my textural hesitance. i used cacao for chocolate bliss and all of its nutrients, and maple syrup for a less processed sweetness. I set them in tiny little jars so that they would sit in the fridge as the perfect go-to for those ‘where’s the sugar’ moments.
2 tablespoons chia seeds
1/2 cup coconut milk
1 tablespoon raw cacao
pinch of salt
pinch of cinnamon
1 tablespoons maple syrup
Mix all ingredients well in a mason jar and set in fridge for at least 2 hours. try to stir after half an hour to stop the seeds clumping together. this will make one serve, or two mini serves like mine, and will last for a few days in the fridge.
And yes these are the same seeds that we used to make chia pets from (those of you that are of my generation will remember this ad)!
